Pumpkin adds a vibrant color and sweet taste to this curry-spiced soup. For a more elegant touch, top with fresh cilantro and sour cream.

Thai-spiced Pumpkin Soup

Prep Time:  5 minutes
Cooking Time: 15 minutes
Serves:  4Ingredients
  • 1 cup vegetable broth
  • 1 (15oz) can of pumpkin (of course use fresh pumpkin if available)
  • 2 tsp curry powder
  • 3 tsp brown sugar
  • 3/4 tsp salt
  • 1/8 tsp black pepper
  • 1 cup whole milk or skim milk

Garnish
  • 1 tbsp chopped fresh cilantro
  • 1/2 cup sour cream

Preparation

1. Combine vegetable broth and pumpkin and bring to a boil on low heat.

2. Add curry powder, brown sugar, salt, and black pepper. Simmer for 5 minutes. Add milk and simmer for another 5 minutes.

3. Turn off heat. Serve hot in soup bowls. Garnish with cilantro and a dollop of sour cream.
