I love chicken salad but I’m not a mayo fan. So I decided to try something else:



Ingredients:
  • 3 cups cubed (1/2 inch) roasted chicken
  • 1 celery rib, cut into 1/4-inch-thick slices
  • 2 tablespoons finely chopped shallot
  • 2 cups halved seedless green grapes
  • 3/4-cup thick Greek yogurt
  • 3/4 cup cream fraiche
  • 3 tablespoons lemon juice
  • 1 garlic clove minced (optional)
  • 2 tablespoons finely chopped fresh tarragon
  • 1/2-teaspoon salt
  • 1/2-teaspoon black pepper

Directions:

Toss together all ingredients in a large bowl until combined well. Served on radicchios leaves.
