If you look at any list of foods ordered by its nutrient density, you will always seeKale chips #2 Kale topping the list. With its incredibly high amount of vitamins K, A, and C, and over 45 different flavonoids,  Kale is a must eat food for kids today. Research is showing the health benefits of including Kale in your diet include:
  • Antioxidant properties
  • Anti-inflammatory benefits
  • Anti-Cancer qualities

A great way to introduce your kids to the flavor of Kale, is to make Kale chips.  In Dr. Josh Axe’s cookbook, he had an easy recipe.

KALE CHIPS
  • 1 bunch Kale
  • 2 TBL grapeseed oil
  • 1 TBL lemon juice
  • 1/4 tsp. sea salt

Preheat oven to 350 degrees. Chop kale into 1/2 inch pieces.  Place all ingredients in a large bowl and massage the oil, lemon juice, and sea salt into the kale using your hands.  Place on parchment lined baking sheets for 12 minutes.

So, my kids are a little skeptical.  Your kids however, are most likely more open minded about the idea of kale chips, so give them a try!
