How many times do we think of baby carrots, when we think of snacking on vegetables? Sometimes, we just need to mix it up a bit. We also like cucumbers around here. But we don’t want to eat raw cucumbers every time. That gets boring too. Your kids may not even care for the flavour of raw cucumbers, but experimenting with different ways to prepare them is key to finding what your kids like.  Adding a little zest, and flavour, really makes these cucumbers fresh and exciting. I love using marinades for vegetables. I can throw these ingredients together in the morning.  Then they are perfectly ready for an afternoon snack. I don’t have to get the cutting board and ingredients out in the middle of the day.



Cucumber Marinade
  • 1/4 cup lemon juice
  • 1 TBL. sugar
  • 1/4 tsp. celery seed
  • 1 large cucumber, sliced in long, thin strips.

Toss all ingredients until cucumber is coated with the marinade. Refrigerate for at least 2 hours, but up to 5 days!

Tips for Cucumbers
  • They taste best between May and July
  • They are beneficial to good, glowing skin.  With their high water content cucumbers are known to be hydrating for the skin (Erica suffers from extremely dry skin!)
  • The ascorbic acid and caffeic acid help prevent water retention.
  • Cucumbers are a good source of Vitamin C, A and Fibre.
